Summer here in Texas is crazy. Well not for everybody as most Texans loves to go out and be expose in the sun to get their skin tanned. Swimming, camping, playing soccer’s are just one among so many outdoor activities that people do during summer season. But for a Filipina like me, I would rather stay in the house, watch movies and tv shows while enjoying couple of glass of some refreshing drinks than go swimming or do out door activities during Texas summer.

Hubby and I have learned to enjoy things and save at the same time. We try to spend our money wisely to save every penny that we have especially now that we are going to have a baby in this tough economy. We learned to buy Walmart brand items of crackers, spaghetti sauce, ice cream, wipes, diapers… just to mention the few. It’s great to know that you still enjoy eating and other things and save at the same time.

Just like today (my special day), instead of eating out to celebrate, I decided to prepare and cook dinner from what we have in our fridge. Hubby didn’t know it as he was planning to dine out. But since I know he still have some job to be done at work that made him stay longer at work, I decided to just cook what we both love to eat that way, we can both enjoy and celebrate my birth day and save money at the same time. Plus hubby got some time to rest and relax instead of driving to the restaurant…

Nilagang Baboy

I can’t think of anything that I could prepare for our dinner last night that my husband will also eat. I wasn’t really in he mood to fix something just for me as it would mean I need to come up with another dish that hubby would it eat too. And so I just decided to cook Nilagang baboy, one of Pinoy recipe that’s so simple and easy to make…

I don’t have the complete ingredients stock in our fridge so I just put the available veggies that I have… But below are the ingredients of Nilagang Baboy.

Ingredients:

1 lb pork slice
4 potatoes, cut into 4 cubes
2 Pechay, cut into 2 pieces
cabbage, slice
2 onions, diced
10 corns of black pepper
Knor Cubes or Salt and pepper to taste
water

How To:

In a big casserole, put water with the pork. Add onions, black pepper and knor cubes and bring it to boil until the pork is tender. Add the potatoes and simmer until the potatoes is cook. Lower the heat and add the cabbage and pechay then add salt and pepper to taste. Serve it with rice…

Guisadong Munggo

Ingredients:

· 1 cup munggo (mung beans)
· 3 cups water
· 1 tbsp. vegetable oil
· 1/2 lb. pork, sliced
· 2 cloves garlic, minced
· 1 onion, chopped
· 2 tomatoes, chopped
· 2 pcs. Chinese sausage, cubed (optional)
· 2 cups water or broth
· 1 tbsp. patis (fish sauce)
· salt to taste
· 1 cup ampalaya leaves or substitute spinach or watercress

How To:

First, boil mungo beans in water until soft and easily mashed. Set aside. In a pan, heat oil. Cook pork until it turns slightly brown. Add garlic, onions and tomatoes. Sauté for a few seconds until tomatoes wilted. Stir in Chinese sausage (if using) and continue cooking for another 1-2 minutes. Pour in water or broth and add boiled mung beans. Season with patis and salt to taste. Bring to boil and let it simmer until thick. Add ampalaya leaves or substitute. Cover and remove from heat. Serve hot.

Romano’s Macaroni Grill Spaghetti and Meatballs with Meat Sauce – This dish will set you back a staggering 2,430 calories and nearly three days’ worth of saturated fat (57 grams) plus 5,290 milligrams of sodium – more calories and saturated fat than two Macaroni Grill Tuscan Rib-Eye steak dinners.

3. Progresso Traditional, Vegetable Classics, and Rich & Hearty soups – Half a can averages more than half of a person’s daily quota of salt. 7. Pop Secret Movie Theater Butter Popcorn Snack Size Bags – Just one snack-size bag has 11 grams of bad fat, 7 of which are trans fats. Instead, CSPI says choose Orville Redenbacher’s Smart Pop or Smart Balance Smart ’N Healthy – both are made with no partially hydrogenated oils. 9. Chipotle Chicken Burrito – With rice, pinto beans, cheese, chicken, sour cream, and salsa, you get 1,040 calories and 16-1/2 grams of saturated fat – the same as three Subway Steak and Cheese 6-inch Subs. Plus the burrito comes with 2,500 milligrams of sodium! Ordering it without cheese or sour cream cuts the saturated fat to 3-1/2 grams, but you still end up with 810 calories and 2,300 milligrams of sodium. Ay Caramba! Here’s another burrito that will shock you.

10. Cold Stone Creamery’s Gotta Have It Founder’s Favorite – 12-ounces of ice cream, pecans, brownie pieces, fudge, and caramel adds up to a whopping 1,600 calories and 42 grams of saturated fat. That’s about the same as five single-scoop ice cream cones.
